Cava? never realised there was high quality, age-able Cava. Got educated on a visit yesterday. Bought this as a test.

Please report back. I am yet to have a cava that hits with the same complexity and balance as even entry level champagne. A lot recommend Raventos (not Cava, I know) but it just leaves me disappointed every time.

There’s not much high quality Cava produced (compared to the huge volume of the more ordinary stuff), but what there is is exciting, delicious and often good value.

On the high quality end there is just as much technically-not-Cava produced in Penedes, either by individual producers like Raventos or by members of an association called “Corpinnat” that includes Recaredo, Gramona, Llopart and others. Especially within Corpinnat, basically everything produced is very good. And everything retailing (in Spain) at >€25 is excellent. Quite a lot of exciting stuff is labelled as “Classic Penedes” as well. There’s also an exciting collaboration project Colet Navazos where sherry dosage is used.

  3. Try one of ‘Mestres’ bottlings with some age on it, like the 2008 Clos Nostre Senyor. Brioche, toasted nuts, candied fruits, very creamy texture. Just great.
