been really loving the kangaroo steak recently and tried this.
our grocery stores in au don't have a selection of cuts of kangaroo as they would steak. cuts of kangaroo rump and leg would be found at a specialist store. i guess coles buys the leftovers and we end up with the really lean loin cuts. theyre super thin, and end up tough when you grill them.
i tied stacks of them together and ended up with THE most tender kangaroo ever.
might do this again for an AB or rice bowl in the future

You must be in Australia? I ordered ground Kangaroo meat once from a Specialty Meat Processor. It was good. Expensive too, but I wanted to try it.
You savage. Looks delicious! Had a kangaroo burger a bunch of times but never a steak.

Kangaroo is probably one of the best *lean* meats I’ve ever had period. Last time I had a portion of that, I injected it with Wagyu beef tallow and cooked it with bone marrow compound butter.

I had wallaby in a wrap once and I loved it. It was like a sweeter venison.
I had kangaroo once at a local βexotic meatsβ type restaurant. I was not a fan at all. It had a very odd I guess gamey type flavor. 2/10 would not recommend.

We should eat more kangaroo, its one of the few unusual meats that I really enjoyed.
