Fair to middling success with this. I didn't do the toasted cream option and we probably took the caramel past our personal preference. I tested the temp right at the 45m mark and it had gone way over target, and it ended up not being a nice smooth texture. I think the technique was good though, easy to follow recipe. I'll probably try again.

    Oh, right…. It would NOT release from the pan, so I ended up using my blowtorch on it. I was amazed it did eventually come out more or less intact.

    Definitely worth trying again! Interesting that taking the caramel too far messed with the texture…good safety tip, thanks!

    I actually did do the toasted cream…and then fumbled the pan and spilled it, and had to redo it without. 🙁

    But it was delicious!
