📝 Ingredients:
• 1.5 kg (3.3 lbs) chicken thighs and drumsticks
• Salt and pepper, to season
For the Balsamic Glaze:
• 1 cup balsamic vinegar glaze
• 1 cup olive oil
• 2 Tbsp passata
• 2 Tbsp garlic, grated
• 2 Tbsp fresh thyme
• 2 Tbsp oregano
• 2 Tbsp honey
• 1 tsp chili powder
For Garnish:
• Fresh parsley, chopped
• Juice of 1 lemon
To Serve:
• Steamed rice

🍽️ Instructions:
1. Prepare the Chicken:
Preheat your oven to 180°C (350°F). Season the chicken thighs and drumsticks with salt and pepper on both sides and place them into a large oven-safe pot.

2. Make the Balsamic Glaze:
In a separate bowl, combine balsamic vinegar glaze, olive oil, passata, grated garlic, fresh thyme, oregano, honey, and chili powder. Mix well to create a rich and aromatic marinade.

3. Cook the Chicken:
Pour the balsamic glaze mixture over the seasoned chicken, ensuring all pieces are well-coated. Cover the pot with a lid and bake in the preheated oven for 20 minutes.

4. Glaze and Roast:
Remove the lid, baste the chicken with its own juices, and return the pot to the oven. Continue baking uncovered until the chicken is fully cooked and golden brown, about 20-30 minutes.

5. Finish and Serve:
Once out of the oven, garnish the chicken with fresh parsley and drizzle with the juice of one lemon for a bright, fresh flavor. Serve hot with steamed rice and enjoy!
