It looks gross, but is delicious and keeps me full for hours!
Sauté broccoli, bell pepper, onion and mushrooms until charred. Blend cottage cheese and egg whites (I use an immersion blender for easy clean up), scramble into veggies, when nearly cooked add pizza sauce, pepperoni, cheese, tomatoes and olives 🙂 I season with Mrs.Dash Garlic and Herb.
– 1/2 cup egg whites
– 1/2 cup low-fat cottage cheese
– 1/2 cup broccoli
– 1/2 bell pepper, chopped
– 1/2 small onion, chopped
– 1 cup mushrooms, chopped
– 1/4 cup pizza sauce
– 2 Tbsp chopped black olives
– 2 wedges Laughing Cow Light
– 1/4 cup grape tomatoes, chopped
– 8 slices turkey pepperoni, chopped
