
And I can’t recommend it more! We were lucky to get some some sunchokes (or Jerusalem artichokes, or aardpeers near us) in our CSA box and were at a loss with what to do with them. This recipe was perfect, and it was such a warm, comforting soup for the fall. Only changes we made was bulking it up slightly with some potatoes we needed to use up, and a dash of homemade mustard instead of vinegar or lemon juice.
