


Was perfect! Rubbed with Worcestershire and herbs and meat church blanco. Smoked at 250 till it got to 120. Made au jus with the drippings in the bottom of the roast pan with celery carrots onions and sage.
I could have let it go longer, but I really like a “rare push” a little more than medium rare. Especially if I’m the one cooking it
