Fast, tasty, cheap…..red radicchio with pan-fried violin squash.

  1. Let’s see how I cook them: brown 3/4 tablespoons of extra virgin olive oil and a clove of garlic in a pan. Cut the pumpkin into cubes and cook for 3/4 minutes, add the chopped red radicchio and cook for about 10 minutes. A drop of balsamic vinegar and it’s done!
