    I’m quite proud of this discovery. I wasn’t sure if it would work but it totally did.

    I decided to try making my own keto panko breadcrumbs from low carb bread from Giant (1 net carb/ slice).

    I toasted the bread and then put it in the food processor to make bread crumbs (filtering out small crumbs and reprocessing bigger chunks several times)

    I followed a regular tonkatsu recipe, except instead of flour, I dusted the cutlets with carbquik, and then made a homemade tonkatsu sauce with an artificial sweeter.

    My wife couldn’t tell the difference between this and real panko. I’d say it was pretty close, but not 100%. It was definitely a satisfying crispy fried bread coating though.

    I used less than 1 slice of bread per cutlet (I toasted 4 slices but only used a small portion of it)

    I tried these breadcrumbs to bind meatballs too, and it worked great.

    I just use pork panko. But this looks great!👩🏼‍🌾🥗
