Uhhh…the spatchcocking has been undone by putting it in that cramped pot. It’s supposed to be laid out flat on a sheet pan or grill surface.
You got some nice browning and it looks delicious. But you’ve undone the purpose of the spatchcocking which is to give more surface area to the bird allowing more browning on all of the skin and cooking faster.
