Risotto is probably one of the most popular dishes that can be prepared with rice. This dish originates from Italy and in its simplest version can be made only with rice, broth and spices. However, this basic version can be diversified with various additions, such as vegetables, seafood, herbs, cheese and even meat.

Ingredients:

200 g arborio rice
200 g leek
1 and 1/4 teaspoon of salt (flat)
1/2 teaspoon of black pepper (freshly ground)
950 ml vegetable stock
100 g vegan cheese mascarpone type
1 tablespoon of olive oil
1 tablespoon of lemon juice
