If I can give you some advice, roll the dough on itself after you have rolled it out and make a long roll. Then cut it into strips so it’s easier. They still look very good.

You could cut down the flour used for dusting a little
Also rolling it in a rectangle will yield equal length pieces, but other than that, if biting them felt good, you did great
