
Just found this sub recently so I figured I’d see what you folks think about my first try at a brisket! This is from a while back and I’ve done several more since then but this is the only one I took a picture of. Learned some hard lessons about pellet grills during this smoke. Most notably CLEAN THE FIREBOX BEFORE A SMOKE. ALWAYS. Any one else ever set their pellet grill ablaze? I did. I’ll put the story on that in a comment so that this isn’t just a big wall of text.

Can’t tell him to pic… Did it turn out a little dry?
So here’s how I burned down my grill if anyone cares. Started the brisket at 7 am. Went back inside and just kinda relaxed. Came back out about an hour later to check it and my grill had gone cold. What I didn’t know at the time is that the fire had snuffed itself but my pellet augur kept feeding. For a while. But I didn’t know that. So what do I do? Just restart the grill and go back inside. I come back out about 30 minutes later and my grill is at 500°F. I freak out and throw open the lid and it flames up BAD. I panic further and GRAB THE BRISKET BARE HANDED to get it away from the fire. Feel my fingers sink into the fat cap on the bottom. Fat gets fuckin warm. Absolutely blistered my finger tips (literally) but I’ll be DAMNED if I’m dropping this brisket on the ground. Set it on a pan I had out there for later. Then proceed to cut the grill off, clean it thoroughly (but quickly, got a half cooked brisket lookin at me), restart and continue the cook. As someone already pointed out, brisket was a *little* dry but I think for what happened it turned out pretty decent!
