Internal temp hit 170 all the way around slight smoke ring which on a bird concerned me but it was delicious

    Not sure if you brined it but next time try a 1.5-2 day brine and skip the pan. You will be delighted. I do not spatchcock my birds and smoke them for 7-8 hours. 👌👍
