Pretty proud of this one.

Waffles:
140g egg whites
1/4 cup oat fiber
1/4 cup flour
1/4 cup pumpkin puree
1/4 cup monk fruit sugar
Pinch salt
208 calories 19g protein

Chicken tenders are breast oven baked with toasted panko. I measured it and it’s about 6-8g panko each tender. Sometimes less. Used egg white oat fiber dredge but I would use regular flour next time for the dredge and add the extra calories:)
