


NY Strip @ 127 for 2 hours. Ice water bath for 10 mins before going onto the 650 degree griddle to sear it up. Basted with butter, rosemary, garlic and gave it a once over with the blow torch to make sure I had a good crust.
9/10 only because it was more medium than medium rare with the carry over from the basting. I’ll probably do 120 for the bath next time.
