Am a fool so can’t tell if this is fool’s crumb. I’ve never made a loaf that looks like this before. Taste and texture is good though.

Exception is this is 68% hydration.

Please excuse my ignorance, but why do people love open crumbs? I don’t mean to be sarcastic or smart, I am curious. I use bread to eat other stuff, and holes = bad for me.
Its perfect, I can tell by the thin crust that its not underproofed . 10/10

Looks like perfection!
I mean I’d put mayo, Dijon mustard, picked onion, capers, ham, Gruyère and go to town in heartbeat Fools crumb or not
I’d say this is not fools crumb because the holes are somewhat uniform throughout and it also looks nice and light, not like the sponge look you get with underproofed bread
