Exactly… I’m a former restaurant owner and service the restaurant industry for decades and I got to see some of the great chefs of Calgarycook… Use your eyes and plagiarize!.. the first thing I would tell people coming out of the gate you’ve got to start with a good product first

Exactly. The Mrs grew up in the culinary industry, went to school for it, and pretty much can cook anything to perfection. Her father was a cmc and taught her everything. It is hard to find a restaurant that is to her standard, though, so we cook a lot at home. I don’t eat steak at resurants because I can’t justify the cost.

The only difference I’d say is most people can’t get or don’t wanna pay for the quality meat most get at restaurants. Secondly they don’t have the equipment. Not everyone has an oven that gets to 1000-1500 degrees F. They reverse sear or Sous vide and pretend it’s as good as

I’m with ya! I can make it, better, cheeper and my wine cellar is far less jacked up in price! Though i do enjoy being cooked, served and fawned over, I pick my establishments wisely these days.

To spend money on something drowned in cream and doused with salt of course

I feel I cook a steak as good or better than the average steakhouse for a quarter of the price. Whole Foods and Sprouts sell amazing cuts which are usually 25-30 dollars per cut at approximately 1.5 pounds. Also have a local Italian market that sells quality cuts. My secret is I use McCormick garlic salt and Kinders wood fire garlic as my rub.
