    Mostly followed this recipe [https://woonheng.com/vegan-hot-and-sour-soup/](https://woonheng.com/vegan-hot-and-sour-soup/) but added vegan chicken broth for more umami. I doubled the recipe but only used 50 g of Mung bean thread noodles. Added a lot more mushrooms than recipe called for. Used one box of silk tofu per 15 cups of soup. If you want to increase the protein just add more silken tofu. I would have added more but forgot to get extra. I also added some baby corn

    Most of the heat in this soup comes from the white pepper, not the chili oil. So adjust to your tolerance level.
