I was super pleased with how this came out, and it’s like over a pound of food. Most of the calories come from the pork which can be subbed for chicken or whatever.

The ‘stuffing’ is just some cous cous cooked in the microwave mixed with leftover crock pot pulled pork and sugar free bbq sauce. All I did for the squash was slice and gut it, no oil or anything.

Highly recommend, this came in at like 570 cals but like I said most of that is from the pork. Next time I’ll use less anyway because all of the stuffing didn’t fit in the squash, I had to go back and re-load

Also the whole thing is edible! Skin and all which I thought was cool.
