I made some of my Linzer cookies into little gingerbread men with jam-filled bellies 🥹

    I used the reverse creaming method to make this Linzer cookie dough, which I’ve found works really well to prevent cut-out cookies from spreading too much in the oven. The butter also coats all the flour particles in fat to cut down on gluten development, which results in a really short, crisp cookie!

    As a secondary benefit, you can use slightly colder butter for reverse creaming than you would regular creaming. Combine that with a cold egg, and once the dough comes together in the mixing bowl, you’re good to roll it out immediately without having to chill it!!

    I filled these with pomegranate jelly and cookie butter (my favorite flavor combo this time of year), but you could use whatever jam, jelly, curd, or spread you like 🙂

    Those age adorable and you are a master baker. I do question the choice of RED jam for the giant bullet hole in the middle of the gingerbread man’s chest. But that’s just me.
