Got lots of great meat from a local farmer (taken from a young oxen). But have no idea what’s what.
Many pieces look like the one in the picture. So what is it? Can u sous vide it? And are there resources for me to identify pieces of meat myself? Willing to learn new things.

  2. These don’t look like typical steak cuts. I vote 131F, at least 8-12 hours.

    I had some London broil recently that looked similar. Cut it up to make jerky.
