salt and pepper on both sides for seasoning,
seared in a hot pan with butter for 2 mins each side, basting butter along the way.
Rested for 5 mins before cutting open.
I was surprised when I opened it it was almost fully cooked! Maybe i’ll try 1m30 on each side next.

Looks too well done for my taste. But I bet it’s still delicious .
I’ve been struggling with cooking steaks to the right temperature with how thinly they cut the steaks
High heat get the pan hot then put the steak in make sure the pan is hot then lower the heat
Looks pretty darn good
japanese beef is supposed to be cooked like this, the fat needs more heat to render and it doesn’t really get overcooked in the same way an american steak would. This looks perfect.
Look a little bit on the well done side, but it looks delicious anyway.
No – this is how it’s cooked in Japanese restaurants. They cook it differently than big a$$ American ribeyes.

Good marbled meat should be just fine like this. Still looking juicey.
I’m guessing someone else butchered it and you just cooked it.
You nailed it. I wouldn’t go less on the temp. The fat needs to melt for that silky texture.
Smash
Best way I have found for Wagyu is sous vide 2 hours at 50c, then a quick sear on a blazing hot cast iron. Thick cuts of Wagyu are just too oily for my tastes.
Maybe, maybe not, but I’d eat it!
Try withholding any extra fat next time, let it cook simply in its own fat.
Looks like a good medium cook but I’ve never used Japanese beef before
Id only use butter for basting. Better to use a high smoke point oil (l like avocado oil) for searing. Butter will burn and make the steak not taste as good
No you didn’t. The market butchered it
It’s a pretty good medium. A gentler heat would’ve allowed for medium rare and deeper red but it looks really good!
Technically you butchered it when you cut it up into pieces.
I’d eat it
Looks good
yes please send it to me and ill dispose of it for you
Looks good to me.
Fully cooked?
Looks like Medium to me.
