It was my first time using loaf pans. Toasting bread = avocado toast.

    Recipe:
    200g active starter
    400g bread flour
    50g whole wheat flour
    12g salt
    310g warm water

    Use a dough whisk to combine, let rest 1hr. 3 sets of stretch and folds, 30 min apart. Rest 4-5 hours.

    Shape and into greased loaf pans. Cover and chill overnight. Bake covered at 475F for 20 min, uncover and finish baking at 450F for 25 min.

    This looks great! Do you have any recommendations for loaf pans? I have plenty of regular ones but none for baking covered.
