Got my first loaf out of the way


I followed the Muscle Momma Sourdough video on YouTube pretty closely.

I took my starter out of the fridge Thursday night and fed it every 12 hours until Saturday. Baked on Sunday.

100 grams sourdough starter
350 grams water
500 grams AP flour
10 grams salt

Mixed it, rest for 30 minutes. Stretches 4 times every 30 minutes. Then let it bulk ferment in the oven with the oven light on for 4 hours. I keep my place around 68 degrees so I wanted a warmer environment for fermentation, plus it keeps my curious cats out of it.

Fold, rolled, and shaped as shown in the video. Rest for 30 minutes and fold, rolled, and shaped again. Placed in the baneton and put in the fridge overnight (i stayed up too late after putting it in the fridge. It was probably in the fridge for 13-14 hours).

Pulled out of the fridge and preheated dutch oven to 450 degrees. Baked 30 minutes covered and 15 minutes uncovered. I made a beef stew so it rested about 4 hours before I sliced it.
