I'll put extra details, and tips in the comments. I probably won't make these again. It reminds me of how I would make mackerel patties.

    It’s alright. I followed everyone’s suggestions and they still fell apart. Probably should have added some flour to the mixture as well. I made them much smaller than suggested, ended up with 7 patties. (This is a salad plate.) My suggestions would be when coating the patties, use more flour, sour cream, and panko. Use bowls. Try not to actually touch them after shaping the patties. I put them in the bowl and kind of swirled the flour onto them, used a fork to flip/lift them. Then did the same with the sour cream mixture. Used fork to flip/lift them. And finally the panko, the same process but I pressed as much panko as I could. My dumb electric stove top likes to spike the heat whenever I’m frying something, so they burned a little on the first batch. Slow and gentle steps and I only had one break and that was when I used my hands. I didn’t make the coleslaw or the katsu mayo. I did use the katsu as a dip though.

    All in all, they were okay, not something grand like I expected. Anyway best of luck for those ready to make them another day.

  2. I think refrigerating them made a huge difference. I seem to be in a major minority in loving them and thinking about making more later. They reheated great so I’d love to make a bigger batch and freeze some for quick dinners.
