Are Meat Pies Welcome? This is a Garlic Chicken Pot Pie with a Parmesan Peppercorn Crust

    All inside of pot pies are similar this one has carrots, celery, a blanched pepper, red onions, white onions, garlic and corn. You sweat the veggies in salt, bullion powder and spices to get em all juicy then cook em up with 3 chicken breasts in a little butter.

    After they get all hot and sweaty and the meat cooks on the outside add 1/4 cup of milk and a 1/4 cup of water and stir till boiling. Then add a rue you been stirring up of 40g butter and 40g flour with about 1/4 tsp of black cracked pepper. Boom pie filling.

    Crust is made using normal butter crust but you add plenty of parm and black pepper. If you look up parmesan crust go with the one that does not use cream cheese if you want it to be durable enough for braiding and whatnot. Eggwash before you throw it in the oven to get that golden brown look.

    I use baking paper to roll out my dough for braiding .. roll the dough into a tube shape then fold the baking paper around it to the desired width .. then roll the paper .. the dough extends down the tube created by the paper and you get the perfect width. .. cool the paper to keep it durable .. then cut into 3 strips and go to town on braiding .. it works so well I may try a complex 5 or 6 strip braid soon 💪

    edit: since this post is doing better than I thought I might as well add I used 4 carrots, whatever was left of a celery stalk in the fridge, 2 small red onions, 2 small white onions, 1 blanched green bell pepper, about a cup of canned corn and 3 huge garlic cloves crushed and diced. My spice mix is salt, italian spice mix, veggie bouillon powder 2 heaping scoops, and powdered ginger. I put the veggies in the pan first and let em get all that seasoning mixed in with the juices and butter .. then I throw in the chicken. Make sure the carrots are getting soft before you add the rue. Once it starts to thicken take it off the heat. No bottom. Throw in pie dish. Crust is thick. Cook for 40 mins. Parm Crust is 225 g flour, 150 g butter, 40 g parm, 1 yolk, 1 tsp peppercorns, pinch salt, 2 tbsp iced water .. but I wing it a bit with the parm and pepper

    Great British Bake Off has both sweet and savory bakes and I think that’s the standard we should all go by. It’s life-pie balance. The meat and the sweet. The cheesecake and the cheese quiche.
