    Alright! So this being the first time, I went with some el cheapo drumsticks. Put some rub on them, filled the water pans, filled the smoker box, lit the smoker box with a torch and set the grill to low.

    … it worked! The drums had a nicely infused smoky flavour, and thanks to the water pans and the indirect heat I created with the foil bottom + distance from the grill, I was able to keep the temperate low enough to not end up with pieces of rubber.

    The main challenge I had really was keeping the smoker box lit. I initially set the burner to a setting halfway to “off” (below the settings), but turns out that was way too low and the chips extinguished themselves after a while. Setting the grill to the proper “low” however did the trick without raising the temperature too much.

    When I was done the water pans were almost empty, so it’s important to top these up with warm water roughly once every hour or so to prevent the grill from drying up and overheating.

    All in all I would definitely call this a success. The next time I’m definitely trying ribs!
