TWO different side bean dishes that are quick, delicious, low cost and require NO COOKING! Great for a quick, healthy dinner, or delicious summer bbq side dish to share. Here is the list of ingredients for each recipe below:

Chickpea Salad
2 15 oz cans chickpeas, drained and rinsed
2 stalks of celery, diced
1/2 cucumber, peeled and diced
1/2 large shallot or red onion, peeled and diced
1 cup multicolor cherry tomatoes (or just red tomatoes), cut in half
1/2 cup Kalamata olives, chopped
1 tbsp small Capers
2 tbsp red wine vinegar
2 tbsp olive oil
3/4 cup feta cheese

Three bean salad
1 15 oz can northern beans
1 15 oz can pinto beans
1 15 oz can red kidney beans
1/2 cucumber, peeled and diced
1/2 red onion, peeled and diced
2 tbsp fresh dill, chopped or 1.5 tbsp dried dill
1/4 tsp dried parsley
1/2 tsp garlic powder
1/2 tsp onion powder
One or two shakes of coarse kosher salt (to taste)
2 tbsp red wine vinegar
1 tbsp olive oil
