    Honestly just toss it and tell them, “it’s not labeled so I’m not abled.”

    Also, yeah, I wouldn’t want those veggies to my name.

    I worked in a private club. We were between chefs. I asked for a day off, PT, and was approved. Set my station up so the Sous would have an easy time of it. Had a map of the setup, prep list of what needed doing.
    Came back after my day off and the station is utterly destroyed. No setup of any kind, no prep work, nothing. The station was completely empty. Nothing done. Asked the Sous about it. He looks me right in the eyes and says, “That’s what you get for taking a day off.” Didn’t say anything to him, went to the general manager, told him the story and he tells me, “Tell him I need to see him.”

    He got reamed. Came up to me all pissed off. I looked him dead in the eye and said, “That’s what you get for taking the day off.” Apparently, the GM told him I was more important to the daily operation than he was. The guy was useless on good days. Drunk the rest of the time. When we got a new chef the first thing he did was fire the Sous. Last I heard he was selling used cars.

    Never screw your line cooks over.

    “Drop” them on the floor

    Become petty immediately option.
    Double your prep. Pans on top should almost be empty, and have the backups somewhere annoying af to reach, leave him a note that tells him where they are.

    Not the best strat- fucking hilarious though
