Something thick that will be more likely to stay inside those built-in sauce pockets in the pasta. A ragù would work

I’d stuff’em… stuffed shells but fancier cheeses.

Zozzona. The sauce will coat well and the chunks of guanciale and sausage will fit in there nicely

I feel like almost anything with a distinct texture like sauces with meats because of how scoop-shaped they are and meaty stuff tends to be thicker
Norcina was the first thing i thought of looking at them Get some sausage in them when you stab+scoop and they hold a ton of the cream sauce with the shape and the sheer volume of ridges

I have a ragu in the fridge right now.
I like to make Boscaiola with coarsely chopped mushrooms and salsiccia with them. Check Papagallo on YouTube, they have a great recipe
In the summer I like to do a chunky uncooked sauce with quartered/eighthed overripe tomatoes with that type of pasta.
uhh you could make pasta i think
I’d do vodka sauce or Mac and cheese, but that may get me downvoted in this sub.
