SPRINGFIELD, Mo. (KY3) – Breakfast is the most important meal of the day so I am bringing you some of my favorite breakfast recipes!
Blueberry Muffins
Mother’s Day is coming up and I brought my mom into the studio to help share this classic family recipe.(ky3)
Ingredients
1 box yellow cake mix1 teaspoon baking powder2 Tablespoons flour2/3 cup milk1/3 cup vegetable oil3 large eggs2 cups fresh blueberries
Directions
1) Mix all the ingredients EXCEPT the blueberries
2) Gently fold in blueberries
3) Place in a muffin tin each cup should be 2/3 full
4) Place in a 350°F oven for 15-18 Minutes
5) Let cool for 15 minutes and enjoy! (Be careful the blueberries will be HOT!)

Dough
1 (1/4 ounce) package active dry yeast1 cup warm milk½ cup granulated sugar⅓ cup softened butter1 tsp salt2 eggs4 cups flour
Filling
1 Stick of butter½ cup of brown sugar3 TBS Cinnamon
Icing
1/3 cup cream cheese6 TBSP Butter1/8 tsp salt1 ½ cups of powdered sugar
Directions
Place dry ingredients in a large mixing bowl and whisk together.Warm the milk to 100-110°F then place the yeast in the milk. Wait for the yeast to activate, it should look foamy on top.Once the yeast is activated then combine the wet ingredients with the dry ingredients. Use dough hooks on your mixer and mix all dough ingredients together.Cover the bowl and let it set in a warm place for an hour to allow dough to rise.Make the filling. Make sure the butter is soft and combine with the brown sugar and cinnamon.Once the dough has risen, flour the counter or table top and roll out the dough until it is about 1/4 inch thick.Spread the filling on the dough.roll the dough up into a log. Cut into 1 1/2 inch pieces.Place each roll into a 9×13 pan with space between each roll.Let the rolls rise for about 20 minutes or until they double in size.Place in a 350°F oven for 30-35 minutes or until they are golden brown.Make the icing. Place the cream cheese, butter, and powdered sugar into a mixing bowl and combine.If the icing is too thick, thin it down with a few teaspoons of milk at a time until it reaches the consistency you like.Let the cinnamon rolls cool for 20-30 minutes, place the icing on top and enjoy!
Ham and Swiss Quiche

Mini quiche is the perfect brunch bite or breakfast dish. Ham and cheese mini quiche will never disappoint!
Ingredients
4 eggs1/2 cup of milk1 sheet of crescent roll doughDiced hamShredded Swiss cheese
Directions
Cut the crescent roll dough into 1-inch squares and place in a mini muffin tin.In a large mixing bowl, combine eggs and milk. Whisk together until the mixture is a pale yellow color.Place about 1 TBSP of the egg mixture into each muffin space.Place a few pieces of diced ham into each quiche. Sprinkle shredded swiss on top.Bake in a 350°F oven for 15-20 minutes or until the eggs are fluffy.Serve and Enjoy.
Pancakes

Ingredients
1 1/2 cups flour3 1/2 tsp baking powder1 tsp salt1 TBSP sugar1 egg3 TBSP melted butter1 1/4 cup of milk
Directions
1) Place all the dry ingredients in a bowl and mix them together
2)Add wet ingredients and mix until it forms a batter
3) Grease the griddle or pan and warm it up
4) Pour a spoonful at a time onto the griddle or pan to form a pancake. Add batter to the center of the pancake to make it bigger
5) Once the pancake starts to bubble its ready to flip
6) Flip the pancakes and let cook for 1-2 minutes or until it’s a nice golden brown color
7) Stack them up and enjoy!

3 eggs1/4 cup milk1-2 tbsp butterStir fry steakCheese (I used cheddar jack mix)Tortillassalt and pepper
Directions
Season the steak with salt and pepper. Fry up the stir fry steak in a pan over medium heat.In a different pan, melt the butter. Mix the eggs and milk together and pour into the hot pan.Stir the eggs occasionally but not consistently. If you stir too much your eggs will be rubbery.Once the steak and eggs are cooked, place in a tortilla and sprinkle cheese on top.Serve and enjoy!
