Salted ribeyes and let them rest in fridge for an hour. Cut butts off onions, seared them and halves of sweet potatoes over charcoal. Packaged onions in foil with olive oil, butter, salt and pepper and grilled over indirect heat. Added apple wood chunks to Weber and grilled steaks indirect at 250° until 120° internal. Got a chimney starter ripping, loaded up the Vortex and seared each steak for a minute each side, rotating the meat every few seconds. Garlic aoli on potatoes, wedge of juicy onion on the side and a caesar salad for greens.
