Piyaz (Turkish Bean Salad) Recipe

Ingredients:
2 cups of cooked white beans (or one can of white beans, drained and rinsed)
1 medium-sized onion, thinly sliced
1 medium-sized tomato, diced
1 green pepper, thinly sliced (optional)
2 hard-boiled eggs, sliced (optional)
1/4 cup of fresh parsley, finely chopped
2 tablespoons of olive oil
2 tablespoons of lemon juice (or vinegar)
Salt to taste
Ground black pepper to taste
Optional: Sumac or red pepper flakes for extra flavor
Instructions:
Prepare the Beans: If using dried beans, soak them overnight and cook until tender. If using canned beans, drain and rinse them thoroughly.
Prepare the Vegetables: Slice the onion thinly, and rub it with a little salt to reduce its sharpness, then rinse. Dice the tomato, slice the green pepper, and chop the parsley.
Mix the Ingredients: In a large bowl, combine the beans, onion, tomato, green pepper, and parsley.
Season the Salad: Drizzle olive oil and lemon juice over the salad. Add salt and black pepper to taste. Mix gently to avoid breaking the beans.
Optional Garnish: Add slices of hard-boiled eggs on top. Sprinkle sumac or red pepper flakes for added flavor.
Serve: Piyaz is best served fresh as a side dish or light meal.
