When I was doing hiring, I’ve always said that the kitchens that drug test are the kitchens that aren’t staffed. If you can’t tell in an interview or a stage, cool. If something pops up down the line, whatever. Handle it then.

One of my past head chefs preferred hiring cooks with fast food or corporate kitchen, think franchises like IHOP, Red Robin, Outback Steakhouse, etc., experience because they tended to do the same work except at a faster pace.

My job involves me working with people that run restaurants. Not just cooks and GMS but the owners. Yeah. That sounds about right. These people are completely out of touch with reality. At best they give low ball pre pandemic pay rates. All they can remember back in the 90’s paying like $3.50 an hour and why can’t people just be happy with that when a loaf of bread costs the same amount.

I will never understand this disinterest in bringing on people from fast food. I’ve met so many people that came from it and some can bang it out, and I’ve met plenty of CIA grads that couldn’t deseed a lemon. Lack of desire to teach is weak and it frustrates me sometimes.

I work at a breakfast restaurant and I make a couple bucks short of DOUBLE what they start you at a very very fancy hotel where celebrities come and stay/eat. I can’t imagine the stress/anxiety that comes with working there too lol.
