Pretty sure our old racks are 10-15 years old, or more.

I thought they came to you slightly mangled and missing prongs…

I have! In fact I’ve seen an entirely brand new kitchen. 😛 The managers I work under recently opened up a new location, and they let my current chef design everything. He got 500k euro to design the kitchen and restaurant of his dreams. 😛

Actually going to go there again on Friday. Though it’s more a temporary thing, as I’m basically assigned to the restaurant I already work at.

“Here, I got you a new dish rack.”

    Dishwasher looks at it. “Thanks”

Usually at corporate/institutional facilities. My dish machine company sells used ones for $5.

I opened the restaurant I am in now. Part of that project was supplying the kitchen with everything it needed.

One of those needs, was to get dish racks like this. I also needed them for the glassware, of which, there was a shitload. So, I spent damn near $1000 on those special racks for each type of glass we had and the special cart with wheels that lets you roll a tower of them around.

Turns out, they had plans to put a dishwashing machine under the bar, and never told me.

5 years later, I’ve still got all those dishracks. New, unused.

*Drags cigarette*… Once. In a hotel after the first of the year. Last time we ever saw that F&B Director

  8. Dish racks aren’t new. They are just passed down.

    I’m so moist right now.
