    You could consider adding some more veggies to add some volume and get more fiber.

    Nutrition-wise? Yes, there is protein, fat, and some micronutrients. If you wanted it to be more voluminous you could add something like cabbage or leafy greens or cauliflower rice stir fried with veg, or regular rice, rice + beans, or a low cal soup that is broth-based like miso for example. But this looks good to me, and easy.

    What do you consider good? It looks healthy but also boring for my palate, and more protein than I could eat in one meal. However, I am not you and if it was the right portion size for you and you liked the flavor, then yes it’s good.

    I don’t think I’ve ever seen carrots that look like the ones that appear on American veggie plates.

    I presume they are sold ready shaped and peeled like that rather than you all having some carrot shaping device you use at home?
