I just want to thank the one advising me to use a crockpot or similar with sous vide functionality to use it as a proofing device. Very convenient.

I have some water in the bottom and the steaming thing in the bottom for the starter jar to stand on.

Here I use a meater thermometer I conjunction so I can monitor it.
