You seem to be fairly generous with salt. Hubby can't eat much salt, but I know it's important part of baking. I was taught, in the middle of last century (LOL) that it was only what could be pinched between my fingers. In modern cooking, There seams to be a move for enhancing flavour with more salt that older recipes, how much difference are we talking about? Salted caramel is a really good example, but also in baking biscuit recipes ..
Would it matter if I used either raw sugar or coconut sugar do you think? Probably coconut sugar will affect the colour!
I haven’t made ice cream before either and as I don’t have a churner, after the second whipping can I return it to freezer to keep and use at a later date or will it go really hard again and need to be whipped before serving. I was going to make it up a week or two before Xmas. Thank you
