    That crust is phenomenal! Maybe the interior is isn’t what some prefer but I bet the flavor and texture with the crust more than made up! Hell yes you killed it!

    Overcooked and showing signs of drying out. It’s not ruined, but anybody in here blowing smoke up your ass about this being perfect or anywhere close to ideal is doing you a disservice.

    Did not destroy, but just wondering what temp it was at when pulled. I’ve learned learned with roasts, temp over time. It always worked better for me when it came down for when to pull it.

    Looks nearly perfect to me. Proper technique is a bit more rare though, but I like meat a bit more medium.

    Think its an old meat though. Doesn’t look too good for me. Might give it a 6/10 depending on the taste and texture while chewing.

    I like that multicoloured coaster you have though. Its cute. 😁

    Id totally smash that, but if I have to nit pick Id prefer it just slightly more rare.

    Carry over is around 15 degrees on that size hunk.

  15. Pro tip if you have friends or family that enjoy more of a “medium” cook, treat it like a brisket and wrap it in aluminum foil for most of the cook, then unwrap it for the last 30 minutes and give it a little broil.
