Did not destroy, but just wondering what temp it was at when pulled. I’ve learned learned with roasts, temp over time. It always worked better for me when it came down for when to pull it.

Pro tip if you have friends or family that enjoy more of a “medium” cook, treat it like a brisket and wrap it in aluminum foil for most of the cook, then unwrap it for the last 30 minutes and give it a little broil.
