Been doing this sourdough journey for about a year now, and I think I’ve finally secured a good process!

500g Flour
50g Whole Wheat Flour
110g Starter
385g Water
13g Salt

Mix water and flours first, let sit for 30min to an hour
Add in starter and salt, let sit for 30min
4 sets of stretch and folds
Cover with plastic wrap and let sit overnight
Shape, cold ferment in the fridge for 12-18hours
Bake at 450 for 35min covered
Then Uncovered for 25

I do not pre heat my Dutch oven!

Let cool for an hour, slice and enjoy! 😊
