* 5 lb pork shoulder (seared off then chucked in a crock pot) * cook down 4-5 oz tomato paste and 10 chopped cloves of garlic in the fat from searing the pork shoulder * Deglaze with a 2ish cups of chicken stock and reduce * Cover the meat with some taco seasoning (I just used a premade spice blend because it was on sale for super cheap) * add 1/2 tbsp mexican oregano * Pour your reduced deglazed sauce over the top * pour a 7 oz can of chipotles in adobo sauce over that * add some msg * cook on low for 7 hours * remove from crockpot and shred onto sheetpan * strain off the fat from the crockpot and pour it over the shredded meat * stick under the broiler for 7-10 min * eat over rice or on tortillas
There’s no onion in this, because I forgot to buy an onion… otherwise, it would have been cooked in the searing pan after the meat, but before the tomato paste
