Ive had my egg bite recipe base on lock for a while now and I was struck with the idea to make a sweet version. My sweetner of choice here was monkfruit and torani sugar free french vanilla for the syrup.

I blended all ingredients in a high speed blender except the white sugar (I started with the cottage cheese to get it smooth without adding too much air, then added everything else). Try not to overblend, eggs can get frothy.

Poured in 12 ramekins and baked in a water bath for 30 mins at 300f. Baked til the center read 165, and then chilled in the fridge for a few hours. Before eating, topped with 5g of sugar and caramelized with a blow torch. Could have saved 20 cal by using sweetener but I didn't want to have to run testing on which sweeteners actually camelized.

Resisted the urge to eat 3 or 4 😂 but you probably could for that calorie count. Tempted to make a triple portion size for a sweet breakfast option

For reference my regular egg bite base is just the cottage cheese, eggs and cornstarch. Similar method but I bake them in muffin pans and make 18 in stead of 12.
