700g AP
200g whole wheat
640g water

Autolyse 1 hour. Add 250g starter and 32 g salt

Rest 30 mins

Stretch and folds

Rest 30'mins

Laminate

Bulk ferment for 4 hours with 3 sets of coil foils

Cold ferment for 24 hours

Bake for 42 mins at 450 with some ice cubes
