So my neighbor bought half a cow and stored it in my freezer, I think with the expectation that I would cook the meat and feed it to him in exchange for eating some myself. But the more I'm going through it the more I feel like he just got ripped off, because they thought that he didn't know what he was talking about (and he probably didn't.) The sirloin is extremely thin, I've never seen anything like it before, and the soup bones are just basically 25% bone and 75% flank, the rest is just basically ground beef plus he's got a couple ribeyes and roasts thrown in there for good measure but that seems to be about it. In addition the meat is extremely dark which I've been told as a sign of stress in cattle. Paid $1800. Wondering your thoughts

I’m going to hazard a guess that he was hugely ripped off here. Also it looks badly butchered, some looks like it was cut from frozen – probably all the bits of crap that they wanted to get rid off.
Did he buy it at a gas station? Buddy got hit with the wholesale cheap steak scam
What’s the total weight of what he was sold? If it’s the total of what’s in all 4 photos then definitely ripped off.
Those cuts are unrecognizable. It’s like someone attacked a cow with a chainsaw.
you can’t tell what you got from the pics expect a around 60% yield of beef from live weight. so if a 1000lb 600lb of product and he got half. So 300lb Buyer places the cutting order so depending on what he asked for would give you the mix of cuts. i get a quarter from my dad once a year and it’s mostly ground beef usually around 60lb the rest are roasts and steaks. Not a lot of steaks for sure. i get the brisket and round ground because i have 2 many children.
All that being said you need an honest processor too.

These guys set up shop in home depot parking lots and scam people with shitty frozen cuts. Signs like “6 Ribeyes for $25” type of shit. I had to tell a neighbor to not talk to them any ore after he got scammed with horrible cuts.

Did he fill out his cut sheet for his half? If not then that’s on him. Always fill out your cut sheet. I tell everyone that purchases beef from me that the butcher shop will always call and ask how they want it cut and packaged.
We did this once. Started at 1/4 a cow. Got like 20lbs of bone and maybe 15 lbs of shit cuts. Then the guy who sold it to us disappeared and took a lot of peoples’ money. People who thought they were getting a deal and could not afford to loose that much food.
Usually if it sounds too good to be true then it is.

I get a quarter beef for $500. Usually is around 160 to 180 lbs. I do live in Wisconsin tho, we have a lot of cows

Usually 1800 is the price of a quarter cow. Probably just low quality beef.
Half a cow split head to tail would yield a shoulder, hind and rib. There should be a whole tenderloin(6-8 steaks) Rib section for roast or steaks typically 7-8 ribs, flank and skirt. I’m not seeing any of those. Where’s the chucks? Where’s the rounds?

That hurts to see. $1800 could have bought him 12 lb of A5 Wagyu or 150 lbs of ribeye (on a decent sale) or 60lbs of prime ribeye at a retailer before even any bulk discounts.
I’ve seen this a lot from local butchers who are supposedly the high quality mom and pop operations. People buy a half or whole cow, it comes frozen so you can’t get a good look or feel for how the cuts look, then when you thaw them it looks like the cow was butchered by a blind lumberjack with a chainsaw.
The expectation was you would store, cook, AND feed it to him on exchange for some yourself? Uh, yeah that better be the minimum.

When I bought half of a beef, I got a printout of everything included in the order, and before it was butchered, I was asked specifics on ground beef fat percentage and roasts vs steaks.
Edit: and $1800 is real close to the current going rate for half of a beef where I’m located
You can’t go into a slaughterhouse and act like you don’t know what you’re talking about. They will sell you a whole cow and you’ll end up with half the meat and terrible cuts. You have to know about how many cuts if steak the cow will give you and request so many sirloins and ribeyes , etc… and how many lbs of hamburger. I only use 1 company and I researched before I went to them. For example I purchased a whole cow and the meat filled a 30 cuft deep freezer to the top. I did have a lot of hamburger but I requested it.

Half a cow, and you are showing 4 small packages. A half a cow would fill a full sized freezer. There is something missing here … half cow is 250-300 pounds
