Ingredients:
• 1 cup red lentil, washed
• 1 large onion
• 2 cloves of garlic
• 1 tbsp tomato paste
• 1 tbsp hot red pepper paste (optional for heat)
• 3 tbsp olive oil
• 2 tsp paprika powder
• 2 tsp Turkish red pepper flakes / pul biber
• 1/2 tsp powdered black pepper
• 1/2 tsp dried mint
• 1.5 liter hot water or stock
• 2.5 tsp salt or to taste
Instructions:
1. Wash the lentils thoroughly until the water runs clear and set aside to drain
2. Roughly chop the onions and the garlic cloves.
3. In a large pot, heat up 3 tbsp olive oil and add the chopped onions
4. Stir and cook for 5 – 6 mins untik the onions are softened
5. Add the chopped garlic, stir and cook for 1 min until the garlic is fragrant
6. Add the tomato paste and optionally red pepper paste, stir to combine and sautee 2 mins until the paste is cooked
7. Add 2 tsp paprika powder, 2 tsp pul biber, 1/2 tsp black pepper and 1/2 tsp dried mint
8. Stir and saute for 1 – 2 mins on low heat until the spices are fragrant
9. Add the red lentils and add 1.5 liter water, bring to a boil
10. Switch to low heat and cook covered for 30 mins until the lentils are fully softened and start to split
11. Season with salt and process with a hand blender until the smooth but still a bit chunky
12. Let it rest for 10 mins, stir and serve with fresh bread, lemon wedges and pul biber to taste

Lentil soup is perfect winter comfort food. I’ll have to find some of those Turkish chili flakes and give yours a try.
If you add carrots, it will be more delicious. After adding the lentils, you should roast them for a few minutes:))
