First time prime rib (~3lb)
– smoked at 250° for 1.5hr until IT was 125°
– removed from heat, covered with foil for 30 min
– threw back on Blackstone for a sear for 3 min each side

    I was just talking about doing this last night! I think a trip to the butcher might be in order after seeing this. Beautifully done!
