It's a mixture of salt, sugar and this stuff – dessicated and ground scallops ("fish floss" to some). You can't buy it in the shops as far as I know.
This stuff took me about 2 days to make, but it'll last a year in the mason jar. Probably 30+ servings for £30 of fresh scallops from the fishmonger. 100% worth it.
