I started making sweet brioche buns two and a half years ago. The first recipe I developed featured a cheesecake and lemon curd filling. That recipe went viral on Pinterest, and for good reason. Since then, I’ve turned it into a series, and have made quite a few different flavors, from Apple Cheesecake to my latest (and probably current favorite): Orange Cranberry Cheesecake.
The Apple Cheesecake Brioche Buns was developed in the fall of 2022, and this year tons of people have recreated the recipe and made it their own. This particular recipe is like fall in a bun!

Saw your recipe online. If not using the cheesecake filling (my wife has issues with cream cheese), should all other fillings (fruit preserves, custards, nutella, etc.) be added after baking and cooling slightly? And are there any issues caused by baking the buns without the cheesecake filling in the middle?

I knew these photos looked familiar!! I’ve used your brioche dough recipe for a ton of things!! I actually tried so many brioche dough recipes and they all failed horribly but this one came out absolutely perfect. I am forever grateful.
