This was engaging to read, but I did also expect some sort of recipe.

That was an interesting read, but it seems that they’re going for an all-in-one replacement for eggs that can be used in all of the same ways as an egg is used. There are many other ways to replace eggs, like avocados or applesauce in baked goods, aquafaba for merengue, and tofu can make a pretty convincing egg salad.
